Ingredients: Ms. Kipper's Roasted Tomato-Basil Soup

  • 2 can whole tomatoes...(they r sealed and peeled; 28oz)... if using fresh from the garden... peel tomatoes and use 20 medium tomatoes.
  • 3 tbsp dark brown sugar
  • 1 large onion, minced
  • 2 tbsp garlic, minced
  • 3 cup chicken broth... i use homemade broth
  • 1/4 tsp allspice
  • 3 tbsp tomato paste
  • 1 can evaporated milk (5oz)
  • 1/4 cup fresh basil leaves... can use 3 TBSP of dried
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 stick celery, minced
  • 1 ******* s&p to taste
  • 1 can diced tomatoes with chili.... drained

    Step 1
  • drain cans of whole tomatoes.. AND RESERVE LIQUID....will need liquid later.... preheat oven to 450°????
  • Step 2
  • cover cookie sheet with foil...,spray cookie sheet with non-stick spray. arrange whole tomatoes in single layer. I sprinkle with brown sugar, salt, pepper, minced onions, and sprinkle with garlic powder... cook for about 25-30 minutes... the smell is awesome.... liquid should evaporate and tomatoes begin to color...
  • Step 3
  • in crockpot you should have tomatoes mixture, and all other spices.... tomatoes with chili....minced celery..EXCEPT EVAPORATED MILK...
  • Step 4
  • I use my hand held blender once I put them in my crockpot and the reserved liquid.....you will need the liquid to puree... IF YOU DONT HAVE A HAND HELD.. PUT IN BLENDER AND PUREE.
  • Step 5
  • blend well ..... cover and cook on low for 8 hrs or 4 hrs on high....
  • Step 6
  • add EVAPORATED MILK.... and s&p to taste... cook for another hour on high..
  • Step 7
  • ENJOY!!!
