  • 6 large eggs
  • 3/4 cup milk
  • 2 tbsp olive oil
  • 1 bunch red swiss chard, stems separated from leaves, all rough chopped
  • 1/2 roasted red pepper, chopped
  • 1 onion, chopped
  • 1 salt and pepper
  • 3 oz swiss cheese, grated

    Step 1
  • Preheat oven to 375°F
  • Step 2
  • Heat 1 tablespoon oil in 10" saute pan, over medium heat
  • Step 3
  • Add swiss chard stems, saute until almost tender

  • Add swiss chard leaves, saute until leaves are wilted and stems are tender, remove from pan, place in bowl
  • Step 5
  • Add onion to pan, saute until translucent and tender, remove from pan, place in bowl

  • Add peppers to bowl

  • In separate bowl whisk eggs, milk and salt and pepper to taste
  • Step 8
  • Add egg mixture to vegetables, combine
  • Step 9
  • Add cheese, combine
  • Step 10
  • Over low heat, add 1 tablespoon oil to the 10" pan
  • Step 11
  • Pour entire mixture into pan, cook until bottom is set, about 5 minutes
  • Step 12
  • Place pan in oven, cook until set, about 15-20 minutes
