  • 1 tsp all purpose flour
  • 1 small onion
  • 1/4 tsp pepper
  • 3/4 cup skim milk (divided)
  • 1 1/2 lb white fish or cod fillets
  • 1 tbsp grated parmesan cheese
  • 2 tbsp fresh parsley
  • 1/4 tsp paprika

    Step 1
  • Place potatoes in a saucepan and cover with water and bring it to a boil
  • Step 2
  • Cook until almost tender, then drain water
  • Step 3
  • Slice potatoes 1/8 inches thick and place in a baking dish coated with nonstick cooking spray

  • Sprinkle with flour, top with onion and sprinkle with pepper
  • Step 5
  • Pour half of the milk over potatoes

  • Step 8
  • Cover and bake at 375° for 20-30 minutes or until fish flakes easily with a fork
  • Step 9
  • Sprinkle with parsley and paprika.
