  • 2 ribs celery, sliced into 3/4 inch pieces

  • 1/2 cup dry white wine
  • 1/4 cup chopped parsley
  • 1 3/4 cup mock veal stock
  • 1 can tomato, whole
  • Gremolada topping
  • 1 lemon rind, coarsely grated
  • 1 clove garlic, minced
  • 1/4 cup finely chopped parsley

  • Season the shanks with salt and pepper.

  • Heat a large frying pan and brown the shanks.
