  • In a 9x13 pan
  • 1/2 cup butter, cubed (1 stick)
  • 2 lb red potatoes, washed, and chopped into large even chunks (about 6)
  • 1 small onion, chopped
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tbsp chopped fresh parsley

  • Preheat oven to 375°F

  • Bake for 40 minutes, or until tender.
