  • 2 papayas
  • 1 medium red onion
  • 2 clove garlic
  • 1/2 inch piece fresh ginger
  • 1 cup red wine vinegar
  • 1/2 cup golden brown sugar
  • 1/4 cup dried cranberries
  • 1 stick cinnamon
  • 1/2 tsp salt

  • peel papaya and cut in half
  • Step 2
  • scoop out the seeds and cit into large chunks
  • Step 3
  • peel and chop onion

  • combine all ingredients in large saucepan and bring to a boil.
  • Step 6
  • lower heat and simmer, stirring occasionally,until the onion is tender, about 15 minutes.

  • cool to room temp.

  • remove the cinnamon stick and puree in food processor or blender until smooth.
  • Step 9
  • sauce may be used immediately or refrigerated up to 2 weeks.
