  • 1 yellow onion, chopped

  • 3 tbsp chopped cilantro leaf
  • 2 eggs
  • 1 pinch salt and ground black pepper

  • Prepare all the veg and chop the cilantro
  • Step 2
  • Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds

  • Add onions and cook for two minutes on medium heat
