  • 4 lb corned beef
  • 4 tbsp ground black pepper
  • 2 tbsp coriander powder
  • 1 tsp mustard powder
  • 1 tbsp brown sugar
  • 1 tbsp paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder

How to Make Pastrami

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Pastrami in your home by yourself.

    Step 1
  • Soak corned beef in cold water in fridge for 2 days change water every 12 hrs.
  • Step 2
  • Combine all ingredients to make a rub
  • Step 3
  • Pat dry corned beef, remove most fat, coat with vegetable oil, apply rub evenly. Cover and refrigerate for at least 2 days, longer is better.
  • Step 4
  • Cooking time: 6hrs smoking@ 225°F plus 2hrs simmer, 8 hrs total.
  • Step 5
  • Chill: Wrap in foil and refrigerate for 12hrs.
  • Step 6
  • When ready to serve, steam heat to tenderize, about 2hrs until heated through to 203°
  • Step 7
  • Slice across grain
