  • 2 tbsp Olive Oil
  • 1 Onion (chopped)
  • 3 clove Garlic (chopped)
  • 1 Red chilli (de-seeded & chopped)
  • 1 Tin chopped tomatoes
  • 1 Splash Red Wine Vinegar
  • 1 tbsp Tomato Puree
  • 1 tsp Sugar
  • 1 bunch Torn Basil Leaves
  • 1 Salt
  • 1 Ground Pepper
  • 125 grams Mozzarella Ball crumbled
  • 400 grams Dried penne pasta (cooked & drained)
  • 1 Grated cheese to serve

How to Make Penne pasta with spicy tomato & mozzarella sauce

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Penne pasta with spicy tomato & mozzarella sauce in your home by yourself.

    Step 1
  • Heat oil in saucepan (medium heat) and add onion and fry for 4-5 mins or until softened or beginning to colour
  • Step 2
  • Add garlic & chilling and continue to fry for 1-2 mins
  • Step 3
  • Pour in chopped toms, red wine vinegar, tomato puree, sugar & half of the basil leave and stir well
  • Step 4
  • Bring the mixture to simmer, continue to simmer for 18-20 mins or until sauce has thickened & reduced.
  • Step 5
  • Just before serving, stir in crumbled mozzarella & pasta, then spinkle over rest of basil & grated cheese.
