  • 3 c flour plus more for rolling dough
  • 3 eggs
  • 16 oz sour cream, divided
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 5-6 medium potatoes, peeled and chpped
  • 2 medium onions, chopped and divided
  • 2 tbsp minced garlic
  • 1 cup shredded cheddar cheese
  • 1 stick butter
  • 1 Polish kielbasa
  • 1/2 tsp pepper
  • 1/4 tsp seasoning salt
  • 1/2 tsp garlic powder

How to Make Perogies with Kielbasa and Onion

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Perogies with Kielbasa and Onion in your home by yourself.

    Step 1
  • First, start preparing filling: *boil potatoes until soft *saute 1/3 of the onion, garlic, and salt and pepper to taste in about 2 tbsp butter
  • Step 2
  • Prepare dough: Combine flour, baking powder, and 1/2 tsp salt. Make a well in the middle and fill with half of sour cream and eggs. Combine well and turn out on a floured board. Knead until smooth.
  • Step 3
  • Combine softened potatoes and sauteed onion mix with the remaining half of the sour cream and cheese. This should be the consistency of mashed potatoes.
  • Step 4
  • Roll out dough until about 1/4 inch thick. Using a round cookie cutter or the open end of a large mouth glass, cut circles out of the dough. Continue until all dough is used.
  • Step 5
  • To put together perogies, place about 1 tbsp of potato mixture in the middle of a dough circle. Fold dough circle in half into a half circle shape. Pinch edges together well so that potato mixture will not come out.
  • Step 6
  • Cook perogies: *boil a large pot of water. Drop perogies into boiling water one at a time. Boil about 10 minutes. *melt butter in the bottom of a large frying pan. Using a slotted spoon, remove perogies from water and sautee in butter for a few minutes on each side or until each side is browned. *place perogies on a baking sheet in the oven on the lowest heat setting to keep warm.
  • Step 7
  • Cook kielbasa and onion: *slice kielbasa at an angle inton1/2 inch pieces. *combine onion, 2 tbsp butter, season salt, pepper, and garlic powder. Sautee for 3-5 minutes *add kielbasa to onion mixture and cook through
  • Step 8
  • Place desired amout of perogies on your plate and top with Kielbasa mixture. Enjoy!
  • Step 9
  • You can substitute sauerkraut for the onion in the kielbasa mixture if you desire. My husband doesn't like sauerkraut son onions work better for our family
