Ingredients: Philippine Chicken Lombardy

  • 8 oz Fresh Mushrooms
  • 2 tbsp butter
  • 5 chicken breasts, sliced & flattened
  • 1/2 cup flour
  • 3/4 cup marsala cooking wine
  • 1/2 cup chicken broth
  • to taste salt & pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup parmesan cheese

How to Make Philippine Chicken Lombardy

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Philippine Chicken Lombardy in your home by yourself.

    Step 1
  • Fillet chicken breasts & flatten by placing fillets in large ziploc bag & flattening with meat mallet.
  • Step 2
  • After flattening, dredge each fillet in flour. Cook in batches with 2tbsp butter until golden brown on both sides & no longer pink inside.
  • Step 3
  • Place chicken in lightly greased baking dish, overlapping the edges. Continue the previous steps with the rest of your chicken fillets.
  • Step 4
  • Cook mushrooms in butter, set aside.
  • Step 5
  • Reserve excess drippings from skillet that you used to cook chicken. When all done cooking fillets, add marsala, broth, salt & pepper to drippings from chicken & Cook for 10mins stirring occasionally.
  • Step 6
  • Poor sauce over chicken fillets in baking dish. Combine both cheeses & sprinkle over chicken. Then sprinkle mushrooms over the top.
  • Step 7
  • Bake uncovered for 12-15 mins @ 450° & serve😉
