  • 2 cloves garlic, thinly sliced
  • 4 Tbsp olive oil
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/4 cup pistachios
  • 1/4 cup parmesan cheese
  • to taste salt & white pepper
  • 1 handful chopped parsley for garnish (optional)

    Step 1
  • Blend oil and pistachios in a food processor until a chunky paste is formed.
  • Step 2
  • In a large sauté pan, toast the pistachios and garlic until fragrant. Add white wine and reduce by half, scraping any bits stuck to the bottom of the pan if needed.
  • Step 3
  • Add heavy cream and bring to a simmer. Stir in the parmesan until melted and sauce has thickened. Season with salt & pepper.
  • Step 4
  • To serve add to freshly cooked pasta and toss to coat. Add pasta water if necessary to thin out a bit.
