  • 1 slice of bread
  • 1 salt and pepper to taste
  • 2 tbsp honey
  • 1 tsp dejon mustard (optional)
  • 2 bonless chicken breast

  • preheat oven to 500°F

  • In a bowl mix together pineapples, red onion, red pepper, and cilantro.

  • Step 5
  • slice chicken breast in half (if thick). place the chicken in the honey/dijon mixture, remove and place into breading. place chicken in a non-stick baking dish or use cooking spray before placing the chicken.
  • Step 6
  • place chicken into the oven uncovered and turn the oven down 375°F. Cook for 20 minutes or until crust is golden brown and juices are no longer flowing.
  • Step 7
  • once chicken is cook pour a spoon full of pineapple salsa over chicken and enjoy
