  • 2 c almond meal/flour
  • 1-1/2 c shredded Mozzarella cheese
  • 1/4 c sun-dried tomatoes, finely chopped
  • 2 eggs
  • 1/4 c EVOO
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 oz pepperoni, thinly sliced
  • pizza sauce for dipping, optional

How to Make Pizza Roll-up

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Pizza Roll-up in your home by yourself.

    Step 1
  • Preheat oven to 350°F.
  • Step 2
  • In large bowl, combine almond meal/flour, 1 c cheese and tomatoes.
  • Step 3
  • In small bowl, whisk eggs and oil. Add to flour mixture and mix to form thick dough.
  • Step 4
  • Line baking sheet with parchment paper. Spread dough onto sheet to 10"x10" square and 1" thickness.
  • Step 5
  • Sprinkle dough with spices. Arrange pepperoni and sprinkle 1/2 c cheese on top.
  • Step 6
  • Carefully roll dough, using paper to lift from one end to start. Repair any tears by hand.
  • Step 7
  • Bake 22 min. or until lightly browned. Allow to cool 5 min. before slicing into 1" thick pieces. Serve with pizza sauce for dipping.
