Ingredients: Portuguese rice

  • 1/4 cup olive oil (for sautéing)
  • 1 1/2 cup onion, chopped
  • 2 tsp minced garlic
  • 1 1/2 tsp salt
  • 1/4 tsp crushed red pepper, or flakes
  • 1 bay leaf
  • 1 1/2 cup petite diced tomatoes (14.5 oz can)
  • 2 1/4 cup water
  • 2 tbsp fresh or dried parsley
  • 2 tbsp fresh or dried cilantro
  • 1 1/2 cup white long grain rice

How to Make Portuguese rice

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Portuguese rice in your home by yourself.

    Step 1
  • In a 4-quart medium pan heat olive oil over medium-high heat. Add onion, cook about 4 minutes or until soft.
  • Step 2
  • Add garlic, salt, red pepper, & bay leaf; cook 1 min
  • Step 3
  • Add tomatoes, cook 2 minutes then add water, parsley, and cilantro. Bring back to a boil then add rice.
  • Step 4
  • Boil, stir, cover pot and reduce heat. Cook 20 min then let set for 5 minutes and fluff with fork and serve.
