Ingredients: Pumpkin Cupcake or Cake

  • Cupcake
  • 1 box Pumpkin Bread & Muffin Mix
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup Water
  • Frost
  • 10 1/2 oz Lemon Curd (Click on the search icon for more info ->)
  • 8 oz Mascarpone Cheese (or regular cream cheese)

How to Make Pumpkin Cupcake or Cake

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Pumpkin Cupcake or Cake in your home by yourself.

    Step 1
  • Prepare the Pumpkin Bread & Muffin mix. I used Trader Joe's one, but you can use any from your local grocery store. Or, you can use any pumpkin bread recipe and do it from scratch.
  • Step 2
  • Mix water, eggs and oil together (that's what my bread mix says.). In this step you basically follow the instructions on your pumpkin bread mix.
  • Step 3
  • Add the bread & muffin mix
  • Step 4
  • You can either bake it in a cake pan or use muffin / cupcakes pan. Spoon batter into well-greased and floured pan or paper lined muffin pan cups. Fill about 2/3 full.
  • Step 5
  • Bake at 400°F for about 18-20 min or until a wooden pick inserted in the center comes out clean. I reccomend to follow the instructions that your bread mix box says.
  • Step 6
  • While the cake/cup cakes are baking, prepare the frosting.
  • Step 7
  • Put Lemon Curd and Mascarpone together in a bowl and mix them well together.
  • Step 8
  • When the cake/cupcakes are ready, wait 30 minutes and frost it with the Lemon frosting you just prepared.
