  • 3 cup Mexican melting cheese
  • 1 cup Monterey Jack
  • 1 large Pablano chile (other like Anaheim, Bell works also), use how much you like, or none
  • 2 each links Mexican chorizo sausage

    Step 1
  • Set oven to 350°F
  • Step 2
  • Heat an oven proof skillet on medium high heat. I use a spray oil also.

  • Add the cheese to the skillet. I sort of layered it.

  • Place in oven until bubbly and browned to your liking. About 15 minutes. If for a party, use a casserole dish instead of skillet, it presents better.
  • Step 10
  • Heat some tortillas while the queso is in the oven to serve the queso in.
  • Step 11
  • Queso will be extremely hot, dish on tortillas, but let it cool some so you don't burn your mouth.
