  • 2 lb frozen meatballs, thaw out a bit
  • 1 small onion, chopped
  • 1 tbsp extra virgin olive oil
  • 3 clove garlic, minced
  • 10 cup beef stock
  • 1 tsp powdered garlic
  • 1 lb orzo pasta
  • 14 oz can of Italian style stewed tomatoes
  • 1 lb bag frozen spinach, thawed and squeezed of excess liquid
  • 1 salt and fresh pepper to taste
  • 2 cup grated Parmesan cheese to top each portion

How to Make Quick Meatball and Orzo Soup

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Quick Meatball and Orzo Soup in your home by yourself.

    Step 1
  • In stock pot on medium heat add oil. Saute onions and garlic together for 3 minutes.
  • Step 2
  • Add in meatballs and cook another 4 minutes.
  • Step 3
  • Add in garlic powder, tomatoes, stock and spinach. Raise heat to medium high and bring to boil.
  • Step 4
  • Add in orzo, reduce heat to medium and cook until orzo are just tender, 8-10 minutes.
  • Step 5
  • Check now for salt and pepper , add to your liking.
  • Step 6
  • Remove from heat, serve with a nice salad and crusty bread to dip in broth. Top each serving with cheese.
  • Step 7
  • NOTE: IF YOU PLAN TO HAVE LEFTOVERS, COOK ORZO SEPARATELY. ADD TO EACH SERVING. STORING WITH ORZO WILL RESULT IN ORZO SOAKING IN LIQUIDS AND BECOMING MUSHY.
