  • 2 cup Tri-color quinoa
  • 2 medium Jalapeños
  • 1 large Onion
  • 1/2 clove Garlic
  • 2 cup Chicken stock (low sodium)
  • 1 can Diced tomatoes (30 oz)
  • 1 can Corn (15 oz)
  • 2 can Black beans (15 oz)
  • 1 large Bell pepper (optional)
  • 1 oz Cilantro (chopped)

How to Make Quinoa and Black Beans

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Quinoa and Black Beans in your home by yourself.

    Step 1
  • Heat a pan on medium-high heat. Drizzle olive oil and sauté diced onion and garlic.
  • Step 2
  • Thinly slice jalapeños and add to pan, with seeds if heat is desired. Add diced bell pepper (optional).
  • Step 3
  • Add quinoa and brown with vegetables for 3-5 minutes.
  • Step 4
  • Slowly add in chicken broth. Then add all other ingredients and cover.
  • Step 5
  • Decrease heat to low to allow ingredients to simmer about 15 minutes. Check to ensure quinoa is cooked.
  • Step 6
  • Make sure to season while cooking. Add chopped cilantro a few minutes prior to completion if desired.
