  • 1 cup uncooked quinoa
  • 2 cup canned sweetcorn, drained
  • 2 cup canned red kidney beans, drained and rinsed
  • 1/4 cup yellow bell pepper, diced small
  • 1/4 cup red bell pepper, diced small
  • 6 cherry tomatoes, quartered
  • Dressing
  • 1 tbsp chipotle sauce
  • 1 tbsp extra virgin olive oil
  • 2 tsp clear honey
  • 1 juice of 1 lime
  • 1 good pinch of sea salt

    Step 1
  • Rinse the quinoa in a sieve.
  • Step 2
  • Put the quinoa in a pot with plenty of cold water.
