  • 1 cup quinoa
  • 2 cup water
  • 1/4 cup olive oil (I use extra virgin)
  • 2 limes juiced, about 1/4 cup
  • 2 tsp ground cumin
  • 1/4 to 1/2 teaspoons crushed red pepper flakes
  • 1 1/2 cup grape or cherry tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 to 1 teaspoon salt, to taste ( I use 1/4 teaspoon)
  • 1/4 to 1/2 teaspoon black pepper, to taste
  • 5 green onions, finely chopped
  • 1 (15 ounce can) black beans, drained and rinsed (I used reduced sodium)

How to Make Quinoa Salad

If you have prepared the ingredients needed, now time to start cooking. There are 11 steps you must follow to make Quinoa Salad in your home by yourself.

    Step 1
  • Bring quinoa and water to a boil in a saucepan.
  • Step 2
  • Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.
  • Step 3
  • Set aside to cool.
  • Step 4
  • Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.
  • Step 5
  • Combine quinoa, tomatoes, black beans and green onions together in a large bowl.
  • Step 6
  • Pour dressing of choice over quinoa mixture.
  • Step 7
  • Toss to coat.
  • Step 8
  • Stir in cilantro.
  • Step 9
  • Season with salt and pepper if desired.
  • Step 10
  • Serve immediately or chill in the refrigerator.
