Ingredients: Quinoa salad

  • 1/2 cup quinoa
  • 1 cup water
  • 1 bay leaf
  • 3 tomatoes
  • 1 bunch Spring onions
  • 1 lime
  • 1 tbsp. olive oil
  • to taste Salt and pepper

How to Make Quinoa salad

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Quinoa salad in your home by yourself.

    Step 1
  • Cook the quinoa in a saucepan according to the instructions on the packet.
  • Step 2
  • Wash the onions and tomatoes. I'm in Portugal this week and was amazed by all the sizes and colours of the tomatoes in the market - couldn't resist buying one of each kind to try them all. These are just three of them, but any tomato is fine of course
  • Step 3
  • Put the quinoa in a bowl and squeeze the juice of the lime. Mix well.
  • Step 4
  • Add the chopped onions
  • Step 5
  • Chop and add the tomatoes. And finally add some oregano and the spoonful of olive oil. Mix well, taste, add salt and pepper accordingly.
  • Step 6
  • Put into a serving dish and enjoy :-)
