Ingredients: Quinoa Scramble

  • 1/2 cup cooked Quinoa
  • 1/4 cup Diced Ham
  • 1/4 cup Sharp shredded cheese
  • 4 large eggs
  • 1 tsp Dry mustard
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/4 tsp Ground pepper
  • 3 tbsp Milk
  • 1 small Avocado (Hass)
  • sour cream
  • 1 tbsp Spray Oil (any type..personaly I use either coconut, olive, or grape seed)

How to Make Quinoa Scramble

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Quinoa Scramble in your home by yourself.

    Step 1
  • Make quinoa as directed; Add 1cup quinoa to 2 cups of water in pot. Bring to boil, lower heat to a simmer and cover for about 15min, stirring occasionally (I make a cup to refrigerate the rest and use for other recipes during the week)
  • Step 2
  • Crack eggs in bowl and add all dry powders and pepper. Then add milk and scramble well
  • Step 3
  • Spray and coat pan with oil. On medium low heat make scrambled eggs till just slightly moist (runny). Then add diced ham, cheese, and quinoa.
  • Step 4
  • Reduce heat to low, mix well and let heat for 2min mixing once or twice.
  • Step 5
  • Dish out scrabled mixture, top with avocado, and finally a dollop of sour cream(if desired).
  • Step 6
  • ENJOY!!!
