  • beans
  • 6 cup cooked rice, may be white or brown, keep warm
  • 1 15 ounce can each of black beans, dark red kidney beans and navy beans, drained and rinsed
  • 2 tbsp olive oil
  • 1/2 cup frozen corn, thawed
  • 1 large onion , chopped
  • 1 tbsp each, cumin, garlic powder, chili powder
  • 1 red bell pepper seeded and diced
  • 1 salt
  • 1 small amount of sour cream and shredded cheddar to garnish
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp fresh lime juice

How to Make Rainbow beans over rice

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Rainbow beans over rice in your home by yourself.

    Step 1
  • In a large pot heat oil over medium heat. Saute onion until just transparent.

  • Add spices to onions and stir. Now add in red pepper , corn and black and red beans.
