  • 1 dash salt
  • 2 1/2 cup all purpose flour
  • 2 squares (1 ounce each) semisweet chocolate
  • 1 to 1 1/4 cups seedless raspberry jam
  • 1 powdered sugar

    Step 1
  • Melt chocolate in top of double boiler over hot, not boiling, water.
  • Step 2
  • Remove ftom heat; cool.
  • Step 3
  • Cream butter and sugar in a large bowl until blended.

  • Add egg, vanilla, chocolate extract, baking soda, salt and melted chocolate; beat until light.

  • Blend in flour to make a stiff dough.

  • Remove top sheet of plastic. (If dough gets too soft and sticks to plastic, refrigerate until firm.)

  • Cut dough into 1 1/2 inch squares.
  • Step 13
  • Place half of the squares 2 inches apart on prepared cookie sheets.
  • Step 14
  • Place about 1/2 teaspoon jam in center of each square; top with another square.
  • Step 15
  • Using fork, press edges of squares together to seal, then pierce center of each square.
  • Step 16
  • Bake 10 minutes or just until edges are browned.
  • Step 17
  • Remove to wire racks to cool.
  • Step 18
  • Dust lightly with powdered sugar.
