  • 1/2 lb smoked sausage, sliced into pieces

  • 1/2 tsp basil
  • 1 bay leaf
  • 1 salt to taste
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 1 medium onion, chopped
  • 1 large tomato, chopped
  • 2 tbsp basalmic vinegar
  • 2 tbsp olive oil
  • 3 cup cooked rice. I like the wild, long grain blend

  • soak beans over night , drain
  • Step 2
  • cook beans until almost tender, about 2 hours on medium heat.

  • brown sausage then add to beans

  • add onion, tomato, seasoning to beans

  • cook for 1 hour more or until beans are tender, remove bay leaf
