  • 12 short ribs (about 3 1/2 lbs)
  • 1 tbsp olive oil
  • 1 salt and pepper
  • 1 onion (diced)
  • 3 clove garlic (minced)
  • 2 tsp thyme leaves
  • 3 tbsp flour
  • 1 1/2 cup red wine
  • 1 1/2 cup chicken broth
  • 1 can petite diced tomatoes (14.5 oz)

  • adjust oven rack to lower middle position and preheat oven to 450
  • Step 2
  • coat ribs in oil and sprinkle with salt and pepper
  • Step 3
  • heat Dutch oven pot on medium-high heat

  • cook ribs, turning only once, till browned on both sides. about 5-6 min
  • Step 5
  • drain all but 1 TB fat from pan and sauté onions about 5 min
  • Step 6
  • add garlic and thyme, sauté about 1 min
  • Step 7
  • stir in flour, then wine, followed by chicken broth and tomatoes
  • Step 8
  • return ribs to pot and bring to a simmer
  • Step 9
  • place foil over pot and cover with a lid. place pot in oven for about 1 1/2 hrs
