  • 1/2 t kosher salt
  • 1/4 t freshly ground black pepper
  • 1/2 c fresh parsley leaves
  • 1/2 c toasted walnuts
  • 1/2 t Dijon mustard
  • 1/2 t kosher salt
  • 1/2 t freshly ground black pepper
  • 1 clove garlic
  • 1 lemon (zested)
  • 1 t lemon juice
  • 1/4 c EVOO

  • Preheat oven to 300°F.
  • Step 2
  • To clean artichokes: trim outside green leaves until you reach soft yellow leaves. Cut tops off and trim hard stems. Slice artichokes in half thru stems.

  • Gremolata: In food processor, add parlsey and walnuts and pulse until finely chopped. Add mustard, salt, pepper, garlic, and lemon zest and juice. While running, slowly add oil and process until smooth.
  • Step 5
  • Toss gremolata with warm artichokes and serve hot.
