  • 1 large green zucchini, cut in quartered chunks

  • 1 1/2 cup sliced fresh mushrooms
  • 3 -4 small sweet bell peppers, cut in chunks
  • 6 slice chopped bacon
  • 1/2 cup chopped onion, large dice
  • 3 tbsp brown sugar
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • salt & pepper

  • Preheat oven to 400°F.

  • Cook bacon till almost crisp, add onion and toss for 1 minute. Drain grease saving 1-2 tbsp.
