  • 10 oz frozen, thawed corn
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 2 potatoes, cut in1/2 in cubes
  • 2 cups chicken broth
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 1/2 cups half & half
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 cups shredded, cooked chicken
  • 3/4 cups chopped, drained, roasted red pepper
  • 1 cup fresh cilantro if desired

How to Make Roasted Corn and Chicken Chowder

  • Lightly brown corn in skillet. Set aside.
  • Step 2
  • Cook onion in oil 5 minutes. Add potatoes & broth. Cover, simmer until potatoes are done.

  • In 2 qt saucepan melt butter, add flour and stir. Add half & half, salt and pepper. Cook until thickened. Add sauce to potato mixture. Stir in corn, chicken and roasted peppers. Simmer 5 minutes. Sprinkle with cilantro.
