Ingredients: Roasted Kumara Soup

  • 800 grams Golden or orange Kumara ( peeled)
  • 1 Red onion quartered
  • 1 Red Capsicum quartered
  • 2 large cloves garlic
  • 2 tbsp olive oil
  • 2 cup chicken stock
  • 2 cup water
  • to taste sea salt and pepper

How to Make Roasted Kumara Soup

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Roasted Kumara Soup in your home by yourself.

    Step 1
  • Preheat oven to 200c. Chop the kumara into similar sized chunks and place into a roasting dish with the onion, garlic and capsicum . Drizzle with olive oil and sprinkle with sea salt. Bake for 40 minutes turning occasionally, until tender.
  • Step 2
  • Set vegetables aside until cool to handle and remove the skins from the Capsicum, garlic and onion.
  • Step 3
  • Bring the chicken stock and water to boil in saucepan .Added the vegetables to the stock and blend to a puree. Add salt and pepper to taste.
  • Step 4
  • Serve with a little sour cream if you wish.
