  • 1 bunch Carrots
  • 1 Red onion
  • 1 bunch Leafy greens (Collards, spinach, kale)
  • 4 tbsp Olive oil
  • 2 tbsp Lemon Juice
  • 1 tbsp Miso
  • 1 tbsp Herbs (Rosemary, Sage, Dill)
  • 1 cup Red quinoa

How to Make Roasted Veg Quinoa

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Roasted Veg Quinoa in your home by yourself.

    Step 1
  • Heat oven to 400°F. Cut carrots & onion and toss with 2 tbsp oil, herbs, salt & pepper.
  • Step 2
  • Roast for 30 min, stirring once.
  • Step 3
  • Meanwhile, heat quinoa with 1.25 cups water to boiling. Reduce heat and Simmer 16 min.
  • Step 4
  • Add chopped greens and cover for 5-10 min.
  • Step 5
  • Whisk miso, lemon juice & remaining olive oil. Add quinoa mixture.
  • Step 6
  • Divide into bowls, top with roasted veg and remaining dressing.
