  • 180 grams Dark Chocolate
  • 100 ml Double Cream
  • 6 large Eggs
  • 60 grams Sugar

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Robin's Rich, Fluffy Chocolate Mousse in your home by yourself.

    Step 1
  • Break chocolate into smaller pieces and add to a bowl. Place bowl on top of a pot of boiled water. Place a dish towel over the bowl. The steam underneath the bowl will slowly melt the chocolate as you prepare the rest of the recipe.
  • Step 2
  • Separate egg yolks and egg whites.
  • Step 3
  • Heat cream on low heat until warmed. Once chocolate is melted, pour the cream over the chocolate and mix. Transfer to a larger bowl.
  • Step 4
  • Add the egg yolks to the chocolate and cream and mix well until fully incorporated.
  • Step 5
  • In a separate bowl whip the egg whites while slowly adding sugar until stiff peaks form (meringue).
  • Step 6
  • Put half of the meringue into the chocolate mixture and fold together.
  • Step 7
  • Add the rest of the meringue and gently fold together until most of the egg whites are mixed in. It's ok to have some swirls of white though.
  • Step 8
  • Add mousse to individual glass dishes or leave in bowl and refrigerate for at least 4 hours or overnight. Once set, pipe on whipped cream or decorate with fruit.
