Ingredients: ROCKY ROAD BROWNIES

  • 180 grams butter chopped
  • 500 grams dark chocolate ( I used dark for brownie and milk for topping)
  • 1 cup brown sugar
  • 3/4 cup caster sugar
  • 4 eggs
  • 1/3 cup desiccated coconut
  • 1 1/4 cup plain flour
  • 1/4 cup cocoa powder
  • 2 × 150gram pkts marshmallows halved
  • 180 gram pkt raspberry lollies halved

How to Make ROCKY ROAD BROWNIES

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make ROCKY ROAD BROWNIES in your home by yourself.

    Step 1
  • Preheat oven to 170°C and grease a 20cm×30cm baking pan and line with baking paper.
  • Step 2
  • Stir butter and 250 grams of chocolate in a saucepan over low heat until melted, remove from heat.
  • Step 3
  • Stir in the 2 sugars, then whisk in the eggs one at a time,until combined.
  • Step 4
  • Stir in the coconut,then stir in the sifted cocoa powder and plain flour until combined.
  • Step 5
  • Pour into pan and bake for 30-35 minutes or until cooked.
  • Step 6
  • Cool in pan on a wire rack
  • Step 7
  • Melt remaining chocolate in a large saucepan over low heat until melted, remove and quickly stir in marshmallows and lollies then spoon over top of brownie pressing down with spatula.
  • Step 8
  • Put in fridge to set, then cut into squares and enjoy
