  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp flour
  • 2 lemons
  • 1/2 cup chicken stock
  • 1 tbsp capers
  • 1 salt and pepper to taste

How to Make Salmon Piccata

    Step 1
  • Melt 1 TBL of butter and oil in pan.
  • Step 2
  • Salt and pepper the salmon. Add to pan and cook on both sides until slightly pink on the inside. Remove from pan.
  • Step 3
  • Cook flour in leftover drippings. Add stock, juice from lemons, capers. Cook until slightly thickened.
  • Step 4
  • Remove from heat. Whisk in 2 TBL of butter.
  • Step 5
  • Pour sauce over salmon. Serve over rice.
