  • 1 clove garlic minced
  • 1/4 cup white wine
  • 1/2 cup Frozen Peas
  • 1 cup grated parmesan cheese
  • Salmon
  • 1 Salmon
  • 1 tbsp olive oil
  • 1 salt and black pepper
  • 1 bourbon marinade
  • Scallops
  • 1 Scallops
  • 1 dry white wine
  • 1 tbsp olive oil
  • 1 salt and black pepper

    Step 1
  • Heat the stock to a simmer in a medium saucepan, then lower the heat so that the stock just stays hot.
  • Step 2
  • large saucepan, heat the oil over medium heat. When the butter has melted, add the chopped shallot for 2-3 minutes then add garlic

  • Add the rice to the pot and stir it briskly with a wooden spoon so that the grains are coated with the oil sauté for another minute.

  • Add the wine and cook while stirring, until the liquid is fully absorbed. Add a ladle of hot chicken stock to the rice and stir until the liquid is fully absorbed. When the rice appears almost dry, add another ladle of stock and repeat the process til it's tender.
  • Step 5
  • Stir in the remaining parmesan cheese and season to taste with salt
  • Step 6
  • Marinate salmon in bourbon sauce for at least 45 mins to an hour
  • Step 7
  • Heat oil in large pan on medium high heat. Place salmon skin side up for nice color presentation.
  • Step 8
  • Sear salmon on both sides for 10 mins.
  • Step 9
  • Heat oil in small pan high heat. Place scallops in hot pan season with salt and black pepper
  • Step 10
  • Quickly add white wine and let it cook down. Dear scallops for a total of 4 mins.
