  • 2 large eggs
  • 1 dash almond milk or skim milk
  • 1 salt and pepper
  • 1 Cayenne pepper spice
  • 1/4 cup chopped peppers, I like red and green
  • 2 tbsp fat free shredded cheddar cheese
  • 2 clove of garlic minced
  • 2 tbsp salsa, I like pineapple Al pastor
  • 1/4 cup chopped onion

    Step 1
  • Spray frying pan with nonstick cooking spray
  • Step 2
  • Heat to medium heat
  • Step 3
  • Sauté peppers and onion and garlic until tender
  • Step 4
  • Mix together eggs, milk, cayenne, s&p and cheese
  • Step 5
  • Pour into pan and cook until done to Ur desired consistency
  • Step 6
  • Plate and top with salsa
