  • 1 Fresh egg (medium or large)
  • 100 ml Heavy cream (dairy or non dairy)
  • 30 grams Honey
  • 1 grams Guérande Salt (or good quality flaked salt)

How to Make Salted Honey Ice Cream

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Salted Honey Ice Cream in your home by yourself.

    Step 1
  • Separate the egg yolk and white.
  • Step 2
  • Put the egg white and salt in a bowl and whip into a firm meringue.
  • Step 3
  • Combine fresh cream and honey in another bowl. Whip the mixture until firm peaks form. Add the egg yolk and mix.
  • Step 4
  • Add the meringue into the mixture from step 3. Mix well and pour in a container. Chill in the freezer to harden.
  • Step 5
  • I reduced the honey from another ice cream recipe. This is because salt brings out the sweetness of the honey.
  • Step 6
  • This is my favourite honey from New Zealand, "Pohutukawa honey." I recommend this because it is creamy and very delicious.
  • Step 7
  • This recipe is good in an affogato. Transform this ice cream into an elegant dessert.
