  • 175 grams butter softened plus extra for greasing
  • 175 grams caster sugar
  • 3 eggs
  • 175 grams self raising flour
  • 1 tsp baking powder
  • 3 tbsp jam
  • 2 tbsp icing sugar

  • Preheat oven to 180
  • Step 2
  • Grease 2 tins 7inch
  • Step 3
  • Cream the butter and sugar until light and creamy
  • Step 4
  • Add the eggs one at a time until combined

  • Sieve in the flour and baking powder and fold in to the mixture
  • Step 6
  • Divide the mix between the two tins leveling with a knife
  • Step 7
  • Place in the oven for 15 mins or until golden

  • Allow to cool on wire rack, spread jam in middle and sandwich together and sieve icing sugar over top
