  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 3 clove garlic, minced
  • 1 can red beans with chili seasoning, drained
  • 1 can salsa-style fire roasted tomatoes
  • 1 packages Simple Truth Organic Red quinoa and brown rice (frozen)
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 6 tbsp mild taco sauce
  • salt and pepper
  • 4 oz pepperjack cheese, shredded, divided
  • 4 large red, yellow or orange peppers

How to Make Santa Fe Stuffed Peppers

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Santa Fe Stuffed Peppers in your home by yourself.

    Step 1
  • Prep peppers by cutting off top and removing stems, seeds and membranes. Boil water and submerge peppers for 3 minutes. Set aside. Preheat oven to 350.
  • Step 2
  • Brown turkey, onion and garlic. Add beans, tomatoes and rice/quinoa mix, taco sauce and spices and stir together thoroughly. Let simmer 7-10 minutes then stir in half the cheese.
  • Step 3
  • Place peppers in 2 qt baking dish and stuff with meat mixture. Top with remaining cheese and taco sauce. Bake 15 minutes til cheese is browned and bubbly.
