  • Rub/Marinade
  • 1 tbsp corriander, ground
  • 1/2 tsp cumin, ground
  • 1/2 tsp salt
  • 2 clove garlic, crushed
  • 1 tbsp red curry paste
  • 1/2 lemon, juiced
  • Sardines
  • 4 fresh sardines, scored
  • 2 tbsp olive oil
  • 1/2 lemon, juiced
  • 1/2 small onion, chopped
  • 1 jalapeno, seeded, sliced
  • Toast
  • 4 slice bread, crust removed
  • 8 tbsp butter
  • Garnish
  • 1 tbsp flat parsley leaves

How to Make Sardines on fried toast

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Sardines on fried toast in your home by yourself.

    Step 1
  • Mix marinade ingredients well in a bowl. Rub marinade onto scored sardines. Sit to side.
  • Step 2
  • Heat sauce pot and then add butter to melt. You want butter as hot as possible, in order to fry toast, but without burning or browning butter.
  • Step 3
  • Add slice of bread to hot butter and fry both sides until golden brown. Set fried toast on paper towel to drain any excess grease.
  • Step 4
  • Heat pan, add oil. Once oil is hot, add onions and jalapenos. Cook for 3-4inutes or until onions have evenly browned. Remove from pan.
  • Step 5
  • Add sardines and cook both sides until each side is nice and browned. About 1-2 minutes per side. Add lemon juice to second side.
  • Step 6
  • Serve sardines ontop of toast garnished with fresh parsley.
