  • 1 medium eggplant
  • 1 pack mushrooms, any kind
  • 1 clove garlic
  • 2 Tbsp olive oil
  • 2 sprigs thyme
  • 6 leaves basil
  • to taste Salt & pepper

    Step 1
  • Crush garlic. Put olive oil and garlic in pot and heat on low until fragrant.
  • Step 2
  • Add eggplant and sauté for 2-3 minutes until coated in oil.
