  • 2 packages cauliflower (16 oz), thawed
  • 1 medium onion
  • 1/3 cup butter
  • 1/4 cup all purpose flour
  • 1/3 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp ground mustard
  • 2 cup milk (diabetics should use skim)
  • 1/2 cup grated pamesan cheese
  • topping
  • 1/2 cup bread crumbs
  • 2 tbsp butter, melted
  • 1/4 tsp paprika

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Sheree's Diabetic Cauliflower au gratin in your home by yourself.

    Step 1
  • pulse thawed cauliflower in food processor once or twice just breaking it up.. large chop!!!
  • Step 2
  • put 1" of water in the bottom of a Dutch oven. bring to a boil and turn down to low. cover and cook 5 min. should be crisp but tender. drain in colander for several minutes.
  • Step 3
  • in a LG saucepan saute onions in butter. add mustard, salt, pepper, & flour. after the Roux is made add milk slowly. should thicken to a white gravy.. add cheese and allow cheese to melt.
  • Step 4
  • taste cheese sauce and adjust salt and pepper.
  • Step 5
  • put cauliflower in sprayed baking dish. pour sauce over the cauliflower ..
  • Step 6
  • mix butter, bread crumbs, and paprika and sprinkle on top
  • Step 7
  • bake for 30-35 minutes at 350°.
