  • Grandma's Chicken and Rice Filling
  • 2 cup baked chicken..can use canned or rotisserie chicken
  • 1/2 cup mayonnaise. not SALAD DRESSING!!!
  • 1 can broccoli and cheese soup
  • 1 can cream of mushroom soup
  • 1 cup broccoli (frozen)
  • 1 can sliced carrots
  • 2 cup cooked rice
  • 2 cup shredded cheese
  • 1/2 cup chicken broth or milk (optional)
  • topping
  • 1 cup corn flakes (crushed)
  • 4 tbsp butter, melted
  • if baking a chicken
  • 4 leg quarters
  • 1/4 tsp ground thyme
  • 1/4 tsp season salt (like Lawry's)
  • 1/4 tsp ground black pepper
  • 2 stalks celery, minced
  • 1/4 cup onion, minced
  • 1 cup bell pepper (green, red, and yellow) I use frozen... its cheaper

How to Make Sheree's Grandma's Chicken and Rice Bake (Copycat)

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Sheree's Grandma's Chicken and Rice Bake (Copycat) in your home by yourself.

    Step 1
  • Basically I use leg quarters because I love the taste better. The thighs can be deboned before cooking. This meal is a perfect (FREEZER CASSEROLE).
  • Step 2
  • If you are using pre-cooked chicken go to step #5
  • Step 3
  • If FREEZING do not add CORN FLAKES or BUTTER. It will be soggy.
  • Step 4
  • IF YOU ARE BAKING YOUR OWN CHICKEN.... Put 4 leg quarters in a large bowl. Put everything on the chicken in the bowl. Use the ingredients listed for baking only. Rub all the spices into chicken by hand. Place in a baking dish cover with foil and cook at 375° for 1 1/2 hours. Take it out and open the foil and allow to cool. I use the baking broth mixed with the soups for flavor.
  • Step 5
  • Put all ingredients for the casserole in a baking dish... I use disposable aluminum pans when I freeze this. If you use pre cooked chicken add about 1/2 cup of milk to mix soups.
  • Step 6
  • Mix well put the crushed corn flakes on top and drizzle melted butter on top.
  • Step 7
  • Bake casserole uncovered ... For 35-40 minutes at 350°.
  • Step 8
  • If frozen allow to thaw before baking.
