  • 4 cup water
  • 3/4 cup dried bonito flakes
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 4 spinach
  • 2 packages Japanese udon noodlew
  • 6 shiitake mushrooms (soaked)

    Step 1
  • Bring water to boil; reduce heat and add the dried bonito flakes.
  • Step 2
  • Simmer for 15 minutes, strain; save the stock and heat pot. Throw out flakes.

  • Add soy sauce and sugar to the stock.
  • Step 4
  • Slice shiitake mushrooms. Add to the heated stock, along with the mushroom soaking liquid. Cook for three minutes.
  • Step 5
  • Add noodles ; cook for 2 minutes.

  • Put in the spinach and cook for about 1 minute.
  • Step 7
  • Serve in two large bowls
