  • Poke a hole in the soft eye with a screw driver and pout the juice out in a jug if keeping.

  • Peel the skin off with a peeler or knife then rinse in cold water
  • Step 6
  • Put small amounts in either food processor or blender and shred.
  • Step 7
  • Turn oven to 200°F 93 farenheight and place the coconut on baking tray lined with greaseproof paper and bake for 1hr.
  • Step 8
  • Cool store in airtight container or in freezer containers and freeze. Can be used to make coconut macaroons as perfect for them.
