  • 4 oz plain flour
  • 2 1/2 oz caster (fine) sugar
  • 1 tsp salt,
  • 1 tbsp baking powder
  • 6 oz cornmeal or polenta
  • 12 oz fluid, milk
  • 2 eggs
  • 3 oz butter melted
  • 4 oz margerine ,melted

    Step 1
  • preheat oven to 400C/200F/ gas 6 and line a 9x5 inch loaf tin with grease proof paper and grease
  • Step 2
  • sift flour ,sugar salt and baking powder into a mixing bowl
  • Step 3
  • add cornmeal ,mix in ,make a well in middle
  • Step 4
  • whisk together milk ,eggs,butter and margerine ,pour mixture into well .Stir until just blended ,you must not overstir
  • Step 5
  • place in tin and bake until a skewer inserted in the centre comes out clean , about 40 -45 minutes.
  • Step 6
  • Serve hot or at room temperature.
