Ingredients: Sig's Double Butternut Squash Soup with Herb Drizzle

  • 1 medium Butternut Squash . Do not peel
  • 1 large onion, chopped
  • 2 medium sweet potatoes,peeled and. chopped
  • 4 large cloves of garlic peeled and chopped
  • 3/4 liter of water , adjust later if needed,
  • 3 vegetable stock cubes
  • 1 pinch of thyme,salt and cayenne pepper each .
  • Baked/ Grilled Butternut Squash
  • 1 good pinch dried thyme
  • 2 tbsp olive oil for drizzling
  • 1/2 red chilli finely.chopped to garnish,
  • 1 pinch each salt and cayenne pepper to season .
  • Herb Drizzle
  • 1 small bunch fresh parsley , just leaves ,very finely chopped
  • 1/3 tsp ground coriander
  • 1 clove garlic ,crushed.
  • 1/2 lemon , juice only
  • 100 ml olive oil
