  • 1/3 cup scant , demerara (raw) sugar
  • 1 extra large egg
  • 1 1/2 cup selfraising flour
  • 2/3 cup boiling water

    Step 1
  • Put fruit into bowl,add 1/4pint ( 2/3 cup ) boiling water soak fruit for30 minutes.
  • Step 2
  • Preheat oven to 180C/350F/gas4 . Grease and line the base and long sides of a loaf 1lb loaf tin (pan)
  • Step 3
  • Beat the main quantity of sugar and the egg into the water/fruit .Sift the flour in stir unti well combined.Turn into prepared tin,level the surface and sprinkle the rest of the sugat over top.
  • Step 4
  • Bake for about 50 minutes,until risen and firm to touch.When the bread is cooked a skewer inserted into the thickest part should come out without any mixture on it. Leave in tin.for ten minutes,then turn onto wire rack.
  • Step 5
  • Eaten nice as it is or with butter. Tightly wrapped in foil this will keep for up to 5 days.
