  • mushrooms
  • 12 cheery tomatoes, quartered

  • 75 ml thick cream or to taste
  • for rice
  • 2 tbsp tomato puree
  • 5 tbsp vegetable oil
  • 2 black cardamom pods
  • 3 cloves
  • 5 green cardamom pods
  • 1 finger length stick of cinnamon
  • 12 black peppercorns
  • 700 grams well washed basmati rice soaked for 20 minutes
  • 1/2 handful shredded mint
  • 3/4 handful chopped coriander leaves
  • 1 good pinch of saffron soaked in 2 tablespoons hot milk and 1 tablespoon of heavy cream for 30 minutes

    Step 1

  • Step 3
  • stir in the mushrooms cook until mushrooms release their water. Add about 150 ml of water and simmer until it all comes together , it should be like thick cream
  • Step 4
  • mix gently together with the rice and heat through until rice is cooked.
